VERY LIMITED PRODUCTION

Hand picked, single cultivar, kirari 31 by the 15th generation Okutomi family, from Sayama, Saitamaprefecture.  Kirari 31 is a crossbred between two cultivars - sakimidori and saemidori. A decent umami and vegetal profile considering it is processed as sencha (this cultivar is quite popular as a gyokuro cultivar in other regions like Yame). Absolute joy to eat the leaves after three infusions, recommended to try a little bit on its own as well as with yuzu ponzu!
