Houjicha is roasted tea. The roasting process makes it naturally a low caffeine option. In the tea industry, an old term for the stems that are being roasted is “the bone”, as the roasting process begins, the flat stems puffed up like bones. The interesting aspect of this tea is while it is a roasted tea, the light roasting nature allows you to enjoy both of the roasting profile and umami profile of Japanese green tea. It is probably one of our top favourite smell of houjicha to date.
