A rare single cultivar sencha, soufuu, a cross between Yabukita (the main japanese green tea cultivar, around 70% of total production) and Shizu Inzatsu 131 (of Indian origin), and registered in 2002.

Unlike most Yamecha which highlights a depth of umami, soufuu interestingly highlights a refreshing aroma reminiscent of jasmine and its mild, mellow flavor. We recommend preparing this tea at slightly higher temperature (~80°C) to enjoy its characteristics.
